S13 is just a chassis, 180SX is the hatchback variant which uses it, 180SX is sold in Japan while the 200SX is sold in Europe and the 240SX in North America, basically the same car just different names and engines for different markets. Also the Silvia uses the S13 chassis, it’s only export counterpart is the 240SX Coupe. Zenki, Chuki, and Kouki are kinda like pre-facelift and after-facelift models.

There is the 180sx which was sold in Japan, the 200sx which was available in Europe and the 240sx was only available in America. These numbers also refer to the size of the engine, 180sx had 1,8 litres, 200sx had 2 litres and the 240sx had 2,4 litres. The s12, s13, s14 and s15 stand for the production model, for the different generations of this Datsun/Nissan.And Kouki was always the first type of model to be sold, until the car got a facelift with which it is referred to as the Zenki, or the Chuki.

Careful there, usually the nameplate does indicate engine size but the 200SX S13 only used the CA18DET, meanwhile in Japan the 180SX did use a 1.8 engine for part of its life it also used a 2.0 engine.

180SX - Japan’s S13 Hatchback - Has an SR20DET (2.0l Turbo)
200SX - Europe’s S13 Hatchback - Has a CA18DET (1.8l Turbo)
240SX - America’s S13 Hatchback - Has a KA24E (2.4l N/A)

S13 is also the code used for the Silvia.
Then there’s the S14 Silvia, which is also called 200SX and 240SX outside of Japan

S13 Zenki - Pre-facelift models. Commonly knows as pignose. (1989 - 1990, afaik)
S13 Chuki - 1st facelift. Not really sure about the years. Basically, it’s the most common one. The way S13 were in NFS games :D
S13 Kouki - 1996-1998 models. I think they were only available in Japan. Has a more aggressive front end. Looks aftermarket. Google some pictures and you’ll see what I mean.

I’m not sure if I got everything right, as it is a little bit confusing.
